Subject: El Rancho Chicken & Bean Salad
Content: Delicious and Low-glycemic! Serves 3-4 2 Cans good quality Black beans - drained and rinsed 2 boneless, skinless chicken breasts - cooked, cubed & chilled 1/2 C diced red Onion 1/2 - 1 diced avocado 1 diced Roma tomato 1/4 C diced orange pepper 1/2 C frozen corn 1/4 C fresh cilantro - cut up DRESSING; 1/4 C Lowfat mayo 1/2 C low fat or fat-free Greek Yogurt 1/4 C lime juice 1/4 tsp red pepper or chile or cayenne 1/2 tsp cumin Salt to taste Blend all ingredietns together and p0ur over salad. Stir and chill an hour.
